Strawberry Ice Cream Cake
Basic Oat Crust/Cookie
1 Cup rolled oats
1/2 C pumpkin seeds
10 medjool dates
3 T Maple syrup
1/2 t vanilla powder
2 bananas, frozen
2 C strawberries, frozen
1/4 C coconut cream or oat cream
1 t vanilla powder/extract
1t maca (optional)
Soak dates in hot water for 5-10 min.
Add oats and seeds to food processor and pulse until coarsely ground. Add dates , vanilla, and syrup and mix until sticky.
Press crust dough into a mini tart pan and place in the freezer while you make the filling.
For the filling, place all ingredients into a high-powered blender or food processor. Mix until thick and creamy. Add filling to crust. Place in freezer to set for at least three hours.
Decorate with fresh fruit if deserted. Enjoy.
